- 907.18 g beef stew meat
- 3.69 ml salt (or more according to your taste)
- 4.92 ml turmeric
- 29.58 ml vegetable oil
- 2 small onions, finely chopped
- 5 garlic cloves, minced
- 4.92 ml ginger, minced
- 4.92 ml cumin
- 9.85 ml curry powder
- 14.79 ml coriander
- 14.79 ml paprika
- 4.92 ml cayenne pepper
- 4.92 ml cardamom
- 14.79 ml fresh cilantro
- 2 large sweet potatoes, peeled, diced into 1/2 inch pieces
- 946.36 ml water
directions
- In a bowl, mix beef, salt and turmeric. Heat oil in a pot on medium heat.
- Add onion, garlic and ginger and saute 3 minute
- Add the beef mix and spices and saute 5 minute
- Add the water, cover and simmer until beef tender.
- Add potatoes and simmer another 20 minute.
- Serve over top of rice or as a stew with Nana bread.
- Note: If your curry is a bit on the bitter side, add a pinch of sugar (or more to your liking) when adding the sweet potatoes.

This was really delicious and flavorful. I was intrigued by the combination of ingredients, and they blend together so perfectly. The aroma in the house while this was cooking was fantastic. I simmered the beef for about an hour before adding the sweet potatoes, which I cooked for another 30 minutes. I did end up adding salt, and I think I could reduce the water next time.
