Black Bread (Bread Machine)

"A dark Russian rye bread made in the ABM. This uses applesauce for the fat, but vegetable oil can be used instead. Cook times will vary, depending on your machine."

  • Place all ingredients in bread pan in order listed by your manufacturer.
  • Select basic white bread setting.
  • When done, remove from pan and cool on wire rack 30 minutes before slicing.
  • Serve warm with butter, or use for rueben sandwiches.

  1. Way middle of top fall down? I using recipe for 2 lb bread: Water 110 Deg. F 1-½ cap, Apple vinegar 2 Ts, Olive oil 2 Ts, Salt 1 tea s.,Sugar 1Ts, Bread flour 1-½ cap, Whole flour 1 cap, Rue flour 1-½ cap, Wheat bran ½ cap, Flax seed 2 Ts, yeast 1-1/5 tea spoon. Bread tested very good.
     
  2. How do you measure 1/3 tablespoon accuratley? And what size loaf do i select on my bread machine for this loaf. I'm learning that if ingredients are not measured exactly, it turns out badly.

  1. Followed the recipe to the letter. Ended up with a large brown mass of goo stuck to one side of the pan. VERY difficult to clean. Something wrong with this recipe.

  3. We really loved this bread. I used it to make toast this morning, and look forward to having it at lunch in a sandwich using leftover Christmas ham. I made it as written except I used vegetable oil instead of the applesauce, and bread flour instead of the all-purpose flour. This makes a slightly dense loaf with a nice texture that slices easily. Thank you for sharing this wonderful recipe.<br/>**Made for 2011 Football Pool**
     
  4. I used oil for the choice, didn`t have cider vinegar so I used regular. Skipped the onion flakes. for 1/2 cup of the water I used brewed coffee in place of the instant coffee. Which may be why my bread didn`t rise much. It was so very yummy in flavor. The crust was nice a crisp.   5. We really enjoyed this bread. The fennel and caraway seeds add so much flavor. I did use the olive oil in place of the apple sauce. The texture is wonderful and even slightly warm the bread sliced nicely. This was served with Recipe #292350. It also makes wonderful toast.

  4. Wonderful bread!! I made it this morning so we could have it with our lunch sandwiches. I used canola oil as I didn't have applesauce. I also used wheat bran in place of the oat bran and 1 c. whole wheat flour in place of 1 c. all purpose. I don't have a breadmaker, so I just used my KitchenAid mixer. :) Delish!! Thanks for the recipe!
