Bulging Bison, Elk, or Venison Burritos

"This is am easy way to make a healthy burrito wrap. Extra lean ground beef can be substituted."

  • Spray skillet with cooking spray.
  • Add spices and salt to ground meat and cook until done.
  • Combine beans and rice in a saucepan.
  • Heat on low until warm through (or microwave).
  • Place tortillas in a folded damp towel and place in the oven on low.
  • Place a warm tortilla on plate, keeping other tortillas covered.
  • Place 1/4 bean mixture and meat on flat tortilla, leaving 2 inches at bottom of tortilla so it can be folded up.
  • Add 1/4 cheese, salsa, sour cream, lettuce or anything else that sounds good.
  • Fold up the bottom and roll the sides around.

  2. Excellent burrito. I used the bison as I usually keep some in the freezer since it's so easy to get here on the prairies. Simply loved the use of brown rice (something that I always keep but seriously under use). The seasonings were right on point and so good. Used reduced fat cheddar and skipped the lettuce. Would certainly make again.
     
  3. We loved this easy to make, great tasting burrito! You were not exaggerating when you said they were bulging! I used ground venison, lavash for the tortilla, and hot pepper jack cheese instead of cheddar. I also omitted the sour cream as I am not a big fan. I picked a medium spicy salsa and chopped up a little fresh tomato as a topping. I added a little bit of salt to the brown rice/refried bean mixture. This was fast, easy and I really enjoyed it. It was even really good when I had another burrito for leftovers for lunch today. I'd definitely make this again. Thanks!
     
  4. These were great! I ground up vension from DH's deer this year, so nice and fresh/frozen, lol. I didn't use up all the beans specified for each burrito. Just enough to add the flavor. I did sprinkle with salt just before rolling up. Very filling and great for a winter's lunch! We will be having the rest for dinner and I'm going to have to add some cheese, with cutting back on the beans which I'm sure must add the additional calories, cheese is allowed I think, lol.
     
  5. As the wind started picking up today, and we were famished, it was such a pleasant surprise to come in from the cold and make these quick, wonderful burritos. I used a mixture of ground lean pork, and ground lean beef to make these filling treats. I did reduce the meat to 1/4 lb. of meat, and replaced the "filling" to extra beans, and extra brown rice. When I warmed the beans and rice up in the microwave, I threw in a diced fresh tomato, chopped onion, cumin, and fresh cilantro. Added more cumin when browning the meat. Used whole wheat tortillas and so yummy. Will keep making this so many times, MarraMamba! This is wonderful!

  1. Excellent. I used extra lean ground beef and substituted the refried beans with black beans instead. My boys loved this dinner!

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
