Crock Pot Lentil Soup (Vegetarian)

"I wanted to make lentils on a cold winter's day, so I combined two recipes to create this one. Lentils are great tasting and so good for you. I hope your family enjoys this as much as mine does!"

  • Heat oil in non-stick skillet over medium heat. Add onion and celery; cook until crisp-tender (about 3-5 minutes). Add garlic and saute, being careful not to burn.
  • Combine this with remaining ingredients in a large Crock-Pot. Cook on Low 4 hours or on High 2 hours, or until lentils are tender.
  • Garnish with shredded mozzarella cheese and finely chopped roasted red peppers. You could also serve over or stir in your favorite pasta or rice.
  • NOTE: For more crisp-tender texture, add the frozen veggies during last 30-60 minutes of cooking time. My kids don't like the taste of celery, so I chop it very finely so that it "disappears" in the soup.
  • For Vegetarian you must use Vegetable Broth.

  1. Really good soup! Had to put a lot more veggie broth to get the desired consistency! I also used fresh vegetables instead of frozen and I threw in some spinach to add a little green to the soup! All in all really good (this is coming from a non-vegetarian) and a pretty good source of protein!
     
  2. Oh how we love lentils! YUM! This recipe is fantastic. We halved the recipe (which was a perfect amount for our crockpot). We also added a little extra liquid as it didn't completely cover the lentils and vegetables. I sauteed a carrot along with the onion, celery, and garlic and for frozen veggies used broccoli, peas, and spinach. We also didn't think this was much of a soup as it was very thick so we served it over rice. DELICIOUS!!!
     
  3. As other reviewers have noted, there is not enough liquid in the recipe. I fixed this by adding 1 cup of water and 1 cup of white wine to it. It turned out to be phenomenal! Also, I used a small bag of frozen pearl onions in lieu of the regular onion. Try it, you'll like it! :^)
     
  4. Loved this soup. I halved the recipe, but kept the full 4 cups of liquid. It is still a thick hearty soup. I added chopped red bell peppers too. Very good!
