- 6 large russet potatoes
- 1⁄2 cup sour cream
- 1⁄4 cup 2% low-fat milk
- salt
- pepper
- garlic (optional)
directions
- Dice potatoes and boil until fork-tender; strain.
- Combine Boiled Potatoes and remaining ingredients.
- Mash by hand or with electric mixer for a lighter texture.
- Note: Depending on your taste, you can increase or decrease the amount of sour cream and milk.

Thank you for giving me a way to eat mashed potatoes on my low-fat diet! I've made these twice. First time I used fat-free sour cream along with 1% milk and they were still good with my sauerkraut. The second time, I made them with light sour cream and no milk and that was really good too. I did have to add a bit more sour cream for the consistency that I like. Oh and the garlic is great in it. Of course, I would still love to have my regular mashed potatoes with the full fat milk and gobs of butter, but this recipe has made me a happy camper, since I can no longer eat that way. Thanks so much for sharing!
