12 pitas
- Serves:
- 12
ingredients
- 2 cups whole wheat flour
- 1 1⁄2 cups bread flour or 1 1/2 cups all-purpose flour
- 1 tablespoon dry yeast
- 1 1⁄4 cups warm water (120-130F degrees)
- 1⁄2 teaspoon salt
- 1 tablespoon sugar or 1 tablespoon honey
- 1⁄2 teaspoon cinnamon
- 1 cup apple, chopped
- 1 cup raisins
directions
- 1. Place ingredients except apples and raisins in bread machine in order that your machine specifies.
- 2. Set to "dough" setting and allow to complete cycle, adding the apples and raisins when your machine alerts you to add nuts/fruit. I actually have found that kneading these in by hand is actually easier, as they're a bit finicky to get worked through the dough.
- 3. Separate into 10 balls. Press each ball into a 4" round with your hands - you'll likely need to stuff some raisins and apples back in - it's worth it. Place on nonstick cookie sheets and allow to rise for 30 minutes.
- 4. Preheat oven to 500. Flip rounds, then place in oven for 5 minutes, flip again; turn oven down to 350 and bake for 15-20 minutes longer, until cooked through.
- 5. Remove from pan onto clean towel and cover while cooling.

Hmm, my pitas turned into little loaves of bread. I wonder if it's supposed to read 1 teaspoon active dry yeast not 1 tablespoon? These didn't turn out thin like standard pita bread. Regardless, ~Tasty~ loved these and there's plenty on hand this week for breakfasts and smackerels. Reviewed for Veg Swap/Tag July 2010.

When my staunchly non-vegetarian DH reaches for one of these puppies without putting on butter or other fats, what can I say? I gave some of these away and he said, "Please save a couple of them for our breakfast tomorrow!"; these are that good folks! I made as directed, adding an additional 3 tablespoons water during the kneading cycle and let my bread machine incorporate the raisins and chopped apples; I had my chance to re-incorporate them while making the circles. Thanks, Katzen! Made for Veggie Recipe Swap.

I'm a now vegan who used to make one heck of a souvlaki. I love cooking, I was a huge fan of Moosewood and Molly Katzen prior to going vegan (although that has nothing to do with my choosing the name Katzen - that's just what my German Grandma has called me all my life.) Aside from cooking, I also love scuba diving, cycling, politics, and reading.
